I’ve been so busy on the allotment recently that I’ve barely had time to cook. It’s at times like these that we look for something quick and easy to fill ourselves up with – and what better than eggs? I can barely think of anything so versatile in the kitchen.
Our Saturday morning breakfast was this delicious Breakfast Tortilla (note – this is the traditional Spanish dish similar to a thick omelette, not the Tex-Mex style wrap) from TV chef Dean Edwards, one of literally hundreds onwww.eggrecipes.co.uk.
Eggs are probably the most important ingredient in any kitchen, used in anything from omelettes to cakes, pasta sauces to custards. Theeggrecipes website has been designed to put eggs front and centre, showing how anybody can create a delicious and healthy meal in literally minutes.
I realise that some people are still concerned about eggs following the salmonella scares of old. To be safe (in the UK at least), always use eggs bearing the Lion mark. This guarantees that they have been produced to the highest standards of food safety, from British hens vaccinated against salmonella.
