We’re in the pancake zone at the mo. As such, we set ourselves a little challenge: how many strange things can you do with a classic pancake recipe? If you’re up for making Pancake Day one to remember, try one of these tried and tested pancake recipes:
Millionaire’s Shortbread Pancakes
Who doesn’t like millionaire’s shortbread? You’re gonna’ adore these pancakes. Complete with all the traditional flavours of the much-loved pancake, these ones have some other delicious delights up their sleeves, including caramel, melted chocolate and more. Buy ready-made shortbread, caramel and melt some chocolate and away you go.
Ingredients
• Basic pancake recipe batter
• Readymade caramel
• Milk chocolate
• Shortbread
Method
1. Make up a batch of our basic pancakes, allow to cool slightly on a flat plate.
2. Crumble the shortbread over the pancake and dollop on spoonfuls of caramel.
3. Melt the chocolate in the microwave (in a microwave-safe bowl) in short bursts, stirring in between.
4. Take a spoon and drizzle the chocolate over the pancake.
Rainbow Pancakes
These are pancakes that go beyond the bog-standard pancake. This one’s definitely got the rainbow factor plus, it’s dead easy to do – it just needs a touch of food colouring (and a splodge of patience). Though it takes six batches of batter to make, it’s well worth the effort. Why not sandwich all your rainbow-y delights together with melted marshmallow, melted chocolate to keep the tower in one place?
Ingredients
• 6 x basic pancake recipe batter
• Food colouring: red, orange, yellow, green, blue and purple
• Marshmallows, Nutella or chocolate to sandwich together (optional)
Method
1. Make up a large batch of pancake batter (we did 6 batches of our basic pancake batter). Split into 6 portions.
2. Colour each portion of batter with a little food colouring. Add small drops to the batter until you have the desired colour. If you wish, you can add a little extra flour to the batter to produce slightly thicker pancakes.
3. Cook in ascending order, so purple first, then blue, so you can arrange the rainbow straight from the pan. We made 4 pancakes of each colour to produce thick colour stripes.
4. Sandwich the pancakes together with either melted marshmallow, Nutella or melted chocolate.
5. Sprinkle with icing sugar and enjoy.
Burger Pancakes
That’s right – pancakes that look like a burger. And here's the twist, this little treasure is actually sweet! Take a closer look at the picture, the burger: double chocolate chip cookies; the lettuce: coloured coconut and the sauces: just a little bit of coloured icing! Isn't it amazing what you can do with just a few ingredients and a little imagination?
Ingredients
• Basic pancake recipe batter (replace the milk with buttermilk and flour with self-raising flour for a thicker pancake)
• Desiccated coconut
• Large soft double chocolate chip cookies
• Green, yellow and red food colouring
• Sesame seeds
• Icing sugar
• Milk chocolate, melted
Method
1. Make up a batch of basic pancakes and allow to cool slightly. We made American-style pancakes for this recipe by replacing the milk with buttermilk and the plain flour with self-raising.
2. Colour the coconut with green food colouring to resemble lettuce.
3. Mix the red and yellow food colourings with two separate batches of icing sugar to make the ketchup and mustard sauces.
4. Spread the melted chocolate onto the pancake and place one or two cookies on top.
5. Drizzle over the red and yellow icing and sprinkle with the coconut.
6. Spread another pancake with the melted chocolate and place on top and then sprinkle with sesame seeds.
Chocolate Chilli Pancakes
If you can handle the heat, you can’t go wrong with this recipe. All you have to do is toss a little cocoa powder in the batter with a sprinkling of chopped chilli or chilli power to create a pancake with true chilli power. Don’t forget to drizzle with chocolate and see who can handle the heat.
Chocolate Orange Pancakes
If Terry’s Chocolates Oranges are so tasty, then why can’t the same tastiness be applied to a pancake? After all, there’s something truly exquisite about chocolate with a fruity twist. So add some orange essence or juice to your pancake mixture and if you’re feeling extra naughty (like us), put some choccie segments on top. Remember: it’s not Terry’s, it’s yours.
Banana and Bacon Pancakes
Pineapples and cheese go well together, so why can’t bananas and bacon? Not convinced? Try it yourself – it really works. Cover thick slices of banana with crispy strips of bacon and a drizzle of something nice and sweet, like golden syrup, and you’re onto a winner.
Peanut Butter Pancakes
Sure, butter works well on the top of toast, so we took it further: peanut butter on top of a pancake. Get yourself a jar of chunky peanut butter, blend it with a little oil and caster sugar to balance out the flavour, and you’ll have yourself a fine feast.
Ingredients
• Basic pancake recipe batter
• Chunky peanut butter
• Olive oil
• Caster sugar
Method
1. Make up a batch of our basic pancake and leave to one side.
2. Combine 2 tablespoons of peanut butter with a drizzle of oil and 1tsp of caster sugar. Blend to a smooth paste and add to the batter. You may need to add a little extra flour to the mixture if it's looking too runny. Too thick, add some more milk.
3. Make up the pancakes according to the recipe and serve with toppings of your choice.
Full English Breakfast Pancakes
The Americans do it, so why can’t we? Have an American-style breakfast, complete with eggs, sausages, bacon, tomatoes and, of course, a yummy pancake or two. Dribble the panckes with some maple syrup to bring all the flavours together.
